Autumn is the most wonderful time in the garden. The warm soil and cooler days make it the ideal time for planting – particularly Citrus Trees. If you plant your Citrus trees in autumn it gives them a chance to stretch their roots into the still warm soil and anchor down before the winter and then they’re beautifully established and ready to take off in the spring. Go on- plant a citrus tree today!

Caution Citrus At Work.

If you examine your Citrus at this time of the year you’ll notice that they are holding small green fruit which are a work in progress for the cooler weather.

It is during autumn that the citrus put their energy into fattening and plumping up these little green cannon balls of fruit and it is then the shorter cold days that brings on their vibrant colour.

At this time during autumn it is best to remain consistent, keep your watering even just a little feed of organic fertilizer – if you get too heavy handed with the food you may end up with growth in the foliage at the detriment to the fruit.  Organic tonics are a very safe option at fruit development stage.

Please don’t panic if your citrus drops some of it’s developing fruit. It is impossible for them to carry all of the fruit and they often need to shed some fruit to save stressing themselves as a tree.

In very young trees we would even encourage you to sacrifice the fruit and let the plant put it’s energy into becoming a stronger larger tree that in future years, will hold massive crops. Patience always works best with citrus, they don’t like to be hurried.

Limes

Limes are a very popular Citrus Choice and in time to come they will be as ubiquitous in the back yard as the mighty Lemon.

There are several types of Lime available, in the Citrus Splitzer range we have combined the two most popular the Tahiti Lime and the Kaffir Lime.
Tahiti Lime is the juicy fresh flavoured fruit that you would find shoved in the neck of your Corona Beer. A juicy fruit it is used a tangy flavouring and accompaniment for many beverages and culinary dishes, particularly asian and Indian style dishes.

The Kaffir Lime is the “Spicy Lime” the leaves are extraordinarily aromatic and spicy and are used in cooking, They are used particularly in Asian stir-fries and curries and they make an exquisite alternative wrapping for fish and seafood instead of foil when you’re cooking on the Barbie. The Kaffir Lime does produce a rough skinned fruit, the zest from the skin is delicious and very, very fragrant however the flesh doesn’t really warrant use.

When you own a Citrus Splitzer Lime and Kaffir lime you get the best ends of the lime spectrum on one tree.

Indian Lime Pickle


The citrus fragrance of the lime and the spicy chilli in this pickle will enliven any curry or rice dish…..if you love lime pickles this is a knock out. It takes a little bit of commitment to prepare but it’s easy and so worthwhile.


To begin you need 10 little Tahitian limes. If they’re not home grown make sure you wash and wipe them clean of any residual commercial waxes and oils.

Cut the limes into quarters and salt them with 3 tablespoons of sea salt, toss them all about in a bowl and then pack into a large jar. Place the jar on a morning light window sill and shake the jar every day for 3 – 4 weeks.  After this time you will have a luscious lime slurry that you are going to meld with the following ingredients to create the pickle.

300ml of Mustard Oil
400ml of Malt Vinegar

3 tablespoons of grated fresh ginger
8 garlic cloves
5 red chillies whole
1 teaspoon brown mustard seeds
1 teaspoon ground fenugreek

In a large saucepan heat the mustard oil till it becomes hot then add the chilli powder – mustard seeds and the fenugreek. Stir around and when all the sizzling stops after a few minutes add in the ginger – garlic and chillies.
Drop the heat down on the saucepan and then stir in the limes and the vinegar. Over a medium heat stir this fragrant mixture for about 10minutes – your neighbours will be knocking on your door at this stage wondering if they can book in for dinner.

Have clean and sterilized jars hot and ready to receive the pickle carefully pour into jars and seal allow to cool, wipe jars clean, label and store in a dark cupboard. This pickle improves with age – leave for a couple of weeks before you start your first jar.

Make your own
Citrus Body Scrub.

Citrus is very rejuvenating to dry
skin. This easy to assemble scrub will
exfoliate and enliven dull skin.

Use in the shower on your warm,
wet skin or try it on weary feet after
a lovely foot soak. It’s bliss.

Mix together the juice of a lime or
lemon with 3 tablespoons of coarse
salt and 3 tablespoons of olive oil.
Store in a clean airtight container.
